Look of the Week: Two-Ingredient Pancakes
Since we're headed into the weekend, I thought I'd share a ridiculously simple recipe for pancakes - they literally only take 30 seconds to prepare, and a few minutes to cook. Great for little ones who may often request pancakes (and good for parents who don't always have the time or energy to make them from scratch). This week we're about helping you enjoy some leisure time at home :)
Here we go: Mash 1/2 of a banana in a bowl. Add an egg and beat together. Pour into "pancakes" onto a greased frying pan over medium heat. Lift the edges carefully to see if they're browning and if so, flip. This makes about 3-4 small pancakes.
You can also add chopped blueberries, cinnamon, chocolate chips, etc. (though we have never needed to - they get devoured just as they are).
